Jin-Xuan is a special variety of Oolong known for producing a special fragrance with a very light creaminess. This lightly fermented oolong yields a bright golden yellow color, with a smooth, lingering sweetness. The water used to steep this tea should be about 203°F or 95°C. Use about 15 grams of tea leaves for about every 200 milliliters of water. The initial brew for 60 seconds, 40 seconds for 2nd and 3rd brew. The leaves may be steeped multiple times.
